Baked potatos recipe details
Ingredients
4 large | baking potatoes |
60 g | Cheddar cheese, grated |
250 g | sweetcorn |
100 g | butter |
2 medium | eggs, separated |
salt, to taste |
Instructions
Bake the potatoes in their jackets until soft. Cut each potato in half and with a spoon, remove the the mash potato and place in a bowl. Keep skins and be careful not to cut them.Add butter and salt to taste to the mash. Add egg yolks and sweetcorn and mix well.
In another bowl whisk egg whites until very stiff then fold into the potato mixture.
Preheat oven to 180°C.
Spoon back the potato in each of the skins and cook for about 20 minutes.
Remove from oven and sprinkle with grated cheese.
