|1 kg||potatoes, peeled and sliced|
|120 ml||olive oil|
|salt and pepper|
|1 tsp||dried oregano|
|1 tsp||dried thyme|
InstructionsPreheat the oven to 200°C.
Arrange the potato slices on a baking tray.
In a small bowl, mix together 60 ml of the olive oil and the lemon juice. Coat the potato slices with the mixture. Season with salt and pepper. Sprinkle with oregano and thyme. Pour the water onto the baking tray and bake for 20-30 minutes. Drizzle the remaining oil over the potatoes and bake for 30 more minutes or until done and golden.
Check seasoning and add more salt if necessary, then serve.
