Baked mushrooms recipe details
Ingredients
100 g | shredded coconut |
6 | portobello mushrooms |
100 g | butter, softened |
1 clove(s) | garlic, crushed |
1 | lime, grated peel and juice |
½ tsp | ginger, grated |
1 tbsp | coriander leaves, chopped |
salt and pepper, to taste | |
To garnish: | |
lemon slices | |
coriander leaves |
Instructions
Preheat oven to 200°C/400°F. Place coconut on a baking sheet and bake for few minutes until browned. Remove from oven and cool slightly.Trim the mushrooms, discarding stems and place them in a large roasting pan, trimmed-side up.
Cream butter, coconut, garlic, ginger, lime peel and coriander together and season to taste with salt, pepper and lime juice. Spread the mixture over the inside of the mushrooms. Cover loosely with a ovenproof foil and bake for 15-20 minutes or until the mushrooms are tender.
Serve hot, garnished with lemon slices and coriander leaves, and with fresh bread to soak up the juices.
