Baked mushroom basmati rice pilaf with sausage recipe details
This meaty rice pilaf is plenty of meal, no matter how hungry you are. A great idea for cooked Polish sausage.

Ingredients
Serves: 4- 2 tablespoons olive oil
- 1 celery stick, sliced
- 1 onion, chopped
- 8 ounces mushrooms, sliced
- 8 ounces basmati rice, rinsed thoroughly
- 4 cups vegetable stock, hot
- 1 (14 ounce) can red kidney beans, drained and rinsed
- 8 ounces fully cooked Polish sausage, cut into bite-sized pieces
Preparation method
Prep: 20 mins | Cook: 20 mins1. Preheat oven to 375 degrees F and coat a 13×9-inch baking dish with nonstick cooking spray.
2. Pour oil into an ovensafe skillet and place over medium heat. Cook celery and onion in hot oil until softened, then add mushrooms and cook for 3 more minutes.
3. Add rice to skillet and toss to coat with oil. Then add vegetable stock, kidney beans, sausage chunks, zest, bay leaves, and black pepper to taste. Bring to a boil.
4. Pour pilaf into prepared baking dish, cover with foil, and bake for 20 minutes. Rice should be soft. Stir with a fork. Serve.
