Baked eggs recipe details
- Ingredients:
- 1 Tablespoon good olive oil
- 1/2 teaspoon chopped sage*
- 1/8 teaspoon dried thyme (scant)
- 1 Tablespoon green onion tops, chopped
- 2 eggs (extra large)
- 1/8 cup grated cheddar cheese (sharp)
- A pepper mill
Put the olive oil in the ramekin (you know the size) and run it around the bottom and sides. Put the sage in the bottom and add the thyme. Break the two eggs into the ramekin and sprinkle the green onion over the top. Top this with the cheddar cheese. Bake in the oven at 400 degrees for 10 minutes. Remove and grind a bit of pepper on top and enjoy.
*Note:Buy some leaf sage, get the stems out, and soak it in olive oil for a while. It keeps like this forever. Use it instead of packaged sage.
