Ingredients

6 large Granny Smith apples
125 ml apple brandy, Calvados or apple cider
60 g dried apples, cut into 2.5 cm pieces
250 g mascarpone cheese
100 g dark brown sugar

Instructions

Core each apple within 2 cm of the bottom. Remove a ring of peel around the stem area. Scoop out a pocket 3.5 cm wide and 6 cm deep.

Stand the apples upright in a shallow baking dish. Place the brandy or cider and the dried apples in a sauce pan over medium heat. Simmer gently, stirring occasionally, until the apples are soft and have absorbed most of the liquid.

Remove from the heat and stir in the brown sugar and mascarpone. Spoon the cheese mixture into the centre of the apples. Pour water in the baking dish to the depth of 3 cm. Bake at 180°C for about 30 minutes.
