Baked apple and cheese pancakes recipe details
- Ingredients:
- 1/4 cup margarine or butter
- 1/2 teaspoon salt
- 4 eggs
- 1 cup shredded Swiss, white cheddar, or Monterey Jack cheese
- lemon juice
- 1 cup all-purpose flour
- 1 cup milk
- 2 medium apples or pears, thinly sliced
- powdered sugar (optional)
Heat oven to 425 degrees Fahrenheit. Heat butter in rectangular pan of approximately 13 x 9 x 2 inches in oven until hot and bubbly. Beat flour, milk, salt, and eggs until well blended. Pour into hot pan with melted butter. Sprinkle with cheese. Bake until sides of pancakes are puffed and deep golden brown, approximately 12 to 18 minutes at 425 degrees.
Slice apples and pour lemon juice over to keep from turning brown. Arrange over pancakes as desired. Microwave for a minute (with syrup, if desired) to warm apples. Sprinkle with powdered sugar.
