Fresh apple muffins recipe details
- Ingredients:
- 2 eggs, well beaten
- 2 cups sugar
- 2 teaspoons vanilla
- 1-1/4 cup Wessonoil
- 3 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 teaspoons cinnamon
- 1 cup chopped pecans
- 3 cups peeled and thinly sliced apples
Mix together eggs, sugar, vanilla and oil. In a separate bowl sift together flour, baking soda, salt, and cinnamon. Add the dry ingredients to the egg mixture. Add pecans. Fold in apples. Bake in mini-muffin pans at 325 degrees for 45 minutes.
