Bajan sweet bread recipe details
Ingredients
2 ¼ kg | plain flour |
450 g | grated coconut, not dessicated coconut |
225 g | unsalted butter |
3 tsp | baking powder |
1 l | water |
1 tsp | salt |
225 g | sugar |
225 g | raisins |
2 tsp | vanilla extract |
1 large | egg |
240 ml | milk |
1 tsp | almond essence |
Instructions
Makes 3 loaves.Preheat oven to Gas Mark 4, 180°C, 350°F.
Thoroughly grease 3, 2lb, 500g loaf tins.
In a large bowl mix the flour, baking powder and salt. Melt the butter in a pan.
In another bowl mix the coconut, 200g of the sugar, raisins, milk, essences and melted butter. Mix to a creamy paste. Add to the flour mixture and mix to a stiff dough, with as much water as required.
Divide the mixture between the 3 tins.
Boil a little water with the remaining sugar and brush over the top of the loaves.
Bake for an hour or until a skewer inserted into the centre of the cakes comes out clean.
Cool in tins and then turn out to a wire rack to completely cool. Serve sliced when cold with a cup of tea or coffee.
