Ingredients
5 | baguette rolls, halved |
3 | ripe avocados, peeled and diced |
3 tbsp | olive oil |
1 tbsp | lemon juice |
salt and freshly ground black pepper | |
250 g | cream cheese |
butter | |
2 tbsp | parsley, chopped and sprigs to garnish |
2 | lemons |
Instructions
Mash the avocados with a fork and mix immediately with the lemon juice, oil and cream cheese until well combined. Season to taste with salt and pepper.
Spread the halved baguette rolls with a little butter and generously with the avocado mixture and sprinkle with fresh parsley. Arrange on a serving platter, garnished with parsley sprigs and lemon wedges.
