Christmas muffins recipe details
Ingredients
180 g | flour |
100 g | brown sugar |
170 g | dried mixed fruit |
120 ml | brandy |
60 g | walnuts, chopped |
50 g | cherries, pitted, halved |
2 tsp | cinnamon |
4 tsp | baking powder |
2 medium | eggs, beaten |
240 ml | milk |
130 g | butter, melted |
Instructions
Soak the mixed fruit in brandy for 2 hours.Preheat the oven to 200°C. Prepare 12 muffin tins by brushing the bases with oil.
Combine flour, baking powder, cinnamon and salt in a bowl and add the sugar, nuts and cherries.
In another bowl combine the egg, butter and milk. Stir in the fruit and brandy.
Combine both mixtures and mix to combine. But to not overmix.
Spoon the mixture into the tins and bake for about 15-20 minutes. Cool on a wire rack.
