Ingredients

180 g flour
100 g brown sugar
170 g dried mixed fruit
120 ml brandy
60 g walnuts, chopped
50 g cherries, pitted, halved
2 tsp cinnamon
4 tsp baking powder
2 medium eggs, beaten
240 ml milk
130 g butter, melted

Instructions

Soak the mixed fruit in brandy for 2 hours.

Preheat the oven to 200°C. Prepare 12 muffin tins by brushing the bases with oil.

Combine flour, baking powder, cinnamon and salt in a bowl and add the sugar, nuts and cherries.

In another bowl combine the egg, butter and milk. Stir in the fruit and brandy.

Combine both mixtures and mix to combine. But to not overmix.

Spoon the mixture into the tins and bake for about 15-20 minutes. Cool on a wire rack.
