Ingredients
Serves: 4- 1 pound red potatoes, cubed
- 3 tablespoons water
- 5 bacon slices, chopped
- 3/4 pound smoked kielbasa, sliced
- 1/2 cup chopped onion
- 1 tablespoon olive oil
- 2 tablespoons brown sugar
- 2 tablespoons cider vinegar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- 4 cups fresh baby spinach
Preparation method
Prep: 10 mins | Cook: 25 mins1. Combine potatoes and water in a glass bowl, cover with plastic wrap, and microwave on High for about 4 minutes to cook. Meanwhile, cook bacon in a skillet over medium heat until browned. Drain bacon on paper towels and pour off excess liquid from the potatoes.
2. Pour oil into the skillet with the bacon fat and set back over medium heat. Add kielbasa and onion and cook for about 8 minutes, then add potatoes and cook for another 5 minutes to brown.
3. In a bowl, stir brown sugar, vinegar, mustard, thyme, and pepper together. Then add to the skillet and stir well.
4. When mixture comes to a boil, turn heat down to low and cook for 3 minutes. Then stir in spinach and the cooked bacon and cook for 2 more minutes. Serve.
