Ingredients
500 g | potatoes, peeled and diced |
salt and pepper | |
1 kg | collar bacon, cut into 6 pieces |
6 | carrots, sliced |
3 | onions, sliced |
3 tbsp | red lentils, |
3 tbsp | pearl barley |
2 tbsp | parsley, chopped |
1 stalk(s) | leek, sliced |
1 small | cabbage, sliced |
2 sprig(s) | thyme, chopped leaves |
2 | parsnips, cliced |
Instructions
In a saucepan, cover the bacon with 3 litres of water. Bring to a boil. Add the lentils and the barley. Reduce the heat and simmer for 25-30 minutes.Add the potatoes, cabbage, carrots, onions and parsnips. Season with salt and pepper. Add the thyme. Bring to the boil again. Reduce the heat and simmer for 25-30 minutes.
Stir in the leek. Season to taste with salt and pepper. Cook for 5 more minutes, then serve, sprinkled with fresh parsley.
