Bacon and Cream Cheese Roll recipe

Ingredients

For the dough:
4  eggs, separated
½ tsp salt
75 g crème fraîche
3 tbsp parsley, chopped
100 g flour
1 tsp baking powder
For the filling:
6  spring onions, chopped
225 g crème fraîche
200 g cream cheese
pepper
100 g bacon, diced


Instructions

Preheat the oven to 180°C.

In a bowl, whisk the egg whites with the salt until stiff. Fold in the egg yolks, parsley and the crème fraîche. Fold in the sieved flour and baking powder mixture. Spread the dough onto a lined baking tray and bake for 8-10 minutes.

In a bowl, mix together all ingredients for the filling. Season to taste with pepper.

Turn over the sponge onto a kitchen towel and remove the baking paper. Spread with the cheese mixture and roll up with help of the kitchen towel. Allow to cool down, then place into the fridge for an hour.

To serve, cut the roll into slices.
