Hand mashed red potatoes with skins with a flavor mixture of bacon bits, cheese, and french onion rings. This recipe could be served as the main dish if you are a potato lover like me. This is the only way my family will allow me to serve potatoes in our house.

Ingredients

Serves: 4
  • 4 large red potatoes
  • 1/3 cup Hormel(R) Bacon Bits
  • 3/4 cup sliced Velveeta(R) Cheese
  • 2/3 cup crushed French’s(R) French Fried Onions
  • 1/2 cup milk, or as needed

Preparation method

Prep: 15 mins | Cook: 30 mins

1. Prepare potatoes by washing and removing eyes or bad spots from the potatoes. You want to conserve as much of the skins as possible. Cut potatoes into eighths and place them into an appropriate amount of water (enough to cover them). Bring water to a boil and then simmer for about 2o minutes or until potatoes are cooked. Drain
2. Add Bacon bits, Velveeta Cheese, and French Fried Onions. ( The amounts I have suggested are only guidelines, you will adjust these over time to your taste.) Smash all ingredients to a course (s)mash with a hand potato masher. You do not want the potatoes to be too finely mashed up. (You want some small lumps still in it!) Stir and add milk as required to reach the consistency you prefer. Enjoy!
