Ingredients
12 small | tomatoes, halved |
2 clove(s) | garlic, crushed |
4 tbsp | olive oil |
12 tbsp | sherry vinegar |
1 tsp | English mustard |
salt and freshly ground black pepper | |
200 g | Somerset Goat’s cheese, crumbled |
2 tbsp | flat leaf parsley, chopped |
2 | ripe avocados, halved, stones removed |
25 g | pine nuts, toasted |
Instructions
Divide the tomatoes and the garlic on a baking tray. Sprinkle with 2 tablespoons of oil and grill in the preheated oven for 5-10 minutes until slightly golden. Transfer into a bowl and combine with the goat’s cheese and parsley.In a bowl whisk the vinegar with salt, pepper, mustard and 2 tablespoons of oil until creamy. Drizzle over the salad and toss gently.
Place the avocado halves on plates and cover with the lukewarm salad. Serve sprinkled with pine nuts.
