Avocado with Tomato and Somerset Goat s Cheese Salad recipe

|12 small||tomatoes, halved|
|2 clove(s)||garlic, crushed|
|4 tbsp||olive oil|
|12 tbsp||sherry vinegar|
|1 tsp||English mustard|
|salt and freshly ground black pepper|
|200 g||Somerset Goat’s cheese, crumbled|
|2 tbsp||flat leaf parsley, chopped|
|2||ripe avocados, halved, stones removed|
|25 g||pine nuts, toasted|
Divide the tomatoes and the garlic on a baking tray. Sprinkle with 2 tablespoons of oil and grill in the preheated oven for 5-10 minutes until slightly golden. Transfer into a bowl and combine with the goat’s cheese and parsley.
In a bowl whisk the vinegar with salt, pepper, mustard and 2 tablespoons of oil until creamy. Drizzle over the salad and toss gently.
Place the avocado halves on plates and cover with the lukewarm salad. Serve sprinkled with pine nuts.
