Eggs in purgatory recipe details
- Ingredients
- 4 large tomatoes
- 1/2 pounds mushrooms
- 1 Tablespoon olive oil
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 6 eggs
- salt and pepper (to taste)
- 1 cup shredded sharp cheddar cheese
Peel tomatoes, dice them, and drain off the liquid. Chop up mushrooms and saute lightly with the tomatoes in olive oil. Transfer into an oven-proof dish.
Make hollows in the tomato-and-mushroom mixture with a spoon, then drop in the raw eggs. Top each egg with cheddar cheese. Bake at 390 degrees for 30 minutes.
