Avocado pita bread sandwiches recipe details
Ingredients
4 | pita breads |
1 | avocado, stoned, peeled, cubed |
½ | cucumber, chopped |
2 medium | carrots, peeled, sliced |
120 g | mushrooms, sliced |
60 g | Cheddar cheese, grated |
60 ml | Italian dressing, or any other preferred dressing |
1 tsp | lemon juice |
4 medium | tomatoes, chopped |
Instructions
Gently toss half of the avocado, cucumber, carrot, mushrooms and cheese with the Italian dressing.Fill pita breads each with 1/4 of the mixture.
In a bowl, mash remaining avocado with a fork and stir in lemon juice and tomato. Spoon inside each sandwich.
