Pistachio teacake recipe details
Ingredients
100 ml | applesauce |
100 ml | olive oil |
3 medium | eggs |
240 g | castor sugar |
grated rind of 1 lemon | |
240 ml | pistachio kernels, ground |
180 ml | flour |
1 tsp | baking powder |
¼ tsp | cloves, ground |
icing sugar, for dusting |
Instructions
Preheat oven to 170°C and grease a 6 1/2-cup kugelhopf pan.Combine applesauce and oil. Stir well
Beat eggs and sugar in a large bowl until creamy. Add lemon rind and mix well. Fold in pistachios.
Combine oil mixture with egg mixture.
Sift flour, baking powder and cloves together and add to batter.
Spoon batter into prepared pan, smoothing the surface with a spatula. Bake for 50-55 minutes or until a skewer inserted into the centre comes out clean.
After 15 minutes turn onto a wire rack. Dust with icing sugar while still warm.
