Avocado mousse recipe details
Ingredients
4 | avocados, peeled, stone removed |
200 ml | vegetable broth |
2 tsp | minced onion |
1 ½ tsp | gelatine, dissolved in 1.5 tablespoon of warm water |
3 tbsp | double cream |
3 tbsp | mayonnaise |
salt and pepper, to taste |
Instructions
Scoop the flesh out of the avocados and process in a blender until smooth. Season with salt and pepper and add the onion.Add the broth to the dissolved gelatine and combine with avocado mixture in the blender. Process until smooth.
Transfer to a serving bowl and leave in fridge until completely cold. Then mix in the mayonnaise and cream.
Put into a buttered mould and leave to set for at least 3 hours.
To serve, dip mould into hot water and turn out onto a serving plate.
