Ingredients
2 medium | eggs, yolks only |
1 | avocado, peeled, pitted, sliced into chunks |
1 tsp | dry mustard |
1 pinch(es) | cayenne pepper |
salt and pepper, to taste | |
¾ tsp | paprika |
1 tbsp | lemon juice |
1 tsp | white wine vinegar |
180 ml | peanut oil |
80 ml | olive oil |
Instructions
Place the egg yolks into a blender. Add avocado chunks together with seasonings, mustards, lemon juice and vinegar.Process until smooth and add enough oil to make to make mayonnaise creamy but not too liquid.
Can be stored in refrigerator for up to one week.
