Autumnal salad with baked pumpkin caramelized pear blue cheese and walnuts recipe details
Ingredients
4 handful | rocket or lamb’s lettuce or frisée, trimmed and washed |
1 | ripe pear |
1 tsp | sugar |
150 g | pumpkin pulp, e.g. Hokkaido, cut into 2cm cubes |
1 tbsp | butter |
nutmeg | |
10 | walnuts, roughly chopped |
300 g | blue cheese, e.g. Stilton or Roquefort or Gorgonzola |
3 tbsp | white wine vinegar |
7 tbsp | grape seed oil |
1 tbsp | pumpkin seed oil |
salt and pepper | |
sugar |
Instructions
Peel, quarter and core the pear and cut at an angle into diamonds. Melt the sugar in a pan and toss the pear in the sugar until caramelized.Fry the pumpkin cubes in a pan in butter until soft. Season with salt, pepper and nutmeg.
Roughly chop the walnuts. Toast the walnuts in a dry pan until golden.
In a bowl, whisk the vinegar with salt, pepper and sugar. By and by whisk in the grape seed oil and finally the pumpkin seed oil.
To serve:
Divide the lettuce leaves on the plates and drizzle with the dressing. Arrange on top the crumbled cheese, pear, pumpkin and nuts.
