Autumn apple cake recipe

- 2 eggs, beaten
- 2 cups sugar
- 1 teaspoon vanilla
- 1/2 cup oil
- 2 cups sifted flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 3/4 teaspoons salt
- 1 cups chopped nuts
- 4 cups very finely chopped apples
Combine eggs, sugar, and vanilla and beat well. Add oil and beat until mixture is smooth. Sift together flour, baking soda, cinnamon, and salt. Stir dry ingredients into first mixture. Add nuts and apples, and stir until mixture is smooth.
Turn batter into a greased and floured 11 x 7-inch pan and bake at 325 degrees for 1 hour or until done. This cake is better without icing, but is good served warm with whipped cream.
