Ingredients
For the cake base: | |
100 g | soft butter |
60 g | sugar |
150 g | flour |
For the topping: | |
300 g | soft butter |
300 g | sugar |
6 | eggs, separated |
1 | lemon, grated peel |
salt | |
150 g | flour |
150 g | cornstarch |
450 g | morello cherries, from the glass |
icing sugar |
Instructions
Place the ingredients for the cake base into a bowl and knead until well combined. Cover and cool for an hour.Preheat the oven to 190°C.
Line a buttered cake form with the dough. Bake for 10-15 minutes.
Whisk the egg yolks with half of the sugar, butter and lemon peel until creamy. Whisk the egg whites with the remaining sugar until stiff and fold into the egg yolk mixture, in turn with the sieved flour and cornstarch. Spread the cake base with the mixture. Divide the cherries on top. Bake for 80-90 minutes.
Serve dusted with icing sugar.
