Aubergine rolls with mozzarella recipe details
Ingredients
1 | aubergine |
2 clove(s) | garlic |
5 tbsp | extra virgin olive oil |
70 g | Parmesan cheese |
1 bunch(es) | parsley |
1 | tomato |
1 | shallot |
125 g | mozzarella cheese |
sea salt | |
pepper | |
ground allspice |
Instructions
Preheat the oven to 200°C. Cut the aubergines lengthwise in thin slices. Finely chop the garlic and combine with the olive oil. Brush the aubergines with some of the garlic oil. Place the aubergines on a baking tray and bake for approximately 6 minutes until soft.Grate the Parmesan cheese and chop the parsley. Seed then finely dice the tomato. Finely chop the shallot. In a skillet, sauté the tomato and the shallot in some of the garlic oil.
Cut the mozzarella into small cubes. Combine with the tomato and shallot, the parsley and half of the Parmesan. Season with salt, pepper and allspice.
Brush this mixture onto the aubergine slices. Roll up the slices and fix with a skewer. Place the rolls side by side onto a baking tray, sprinkle with the remaining oil and Parmesan cheese.
Bake the rolls for some minutes in the preheated oven. Serve warm or cold.
