Ingredients
4 | red bell peppers |
1 small | onion |
½ clove(s) | garlic |
1 small | zucchini |
½ | aubergine |
1 | yellow bell pepper |
3 | tomatoes |
salt and pepper | |
thyme | |
4 tbsp | freshly grated Pecorino cheese |
Instructions
Lengthwise half the red bell peppers and remove seeds. Trim the remaining vegetables and cut into bite-sized pieces. Chop onion and garlic. In a saucepan, sauté onion and garlic in oil until golden. Add the aubergines and cook for 2-3 minutes. Add bell peppers and the zucchini and season with thyme, salt and pepper. Cook for another 3 minutes. Finally add the tomatoes. Season to taste with salt and pepper.Stuff the vegetable mixture into the bell pepper halves. Sprinkle with the Pecorino cheese and bake in the preheated oven at 160°C for 25 minutes.
