Au gratin turkey escalopes with savoury pasta recipe details
Ingredients
7 tbsp | olive oil |
2 tbsp | pine nuts, toasted |
1 clove(s) | garlic, minced |
1 bunch(es) | basil, chopped |
30 g | freshly grated Pecorino cheese |
2 tbsp | lime juice |
salt and freshly ground black pepper | |
300 g | spaghetti |
500 g | turkey breast fillet |
250 g | Mozzarella cheese, sliced |
3 | tomatoes, sliced |
Instructions
Place the cheese, pine nuts, garlic, basil and 4 tablespoons of the oil in a blender and process until smooth. Season to taste with salt, pepper and lime juice.Preheat the oven to 220°C.
Cut the meat into 8 escalopes. In a pan, heat the remaining oil. Fry the meat for 2 minutes each side. Season with salt and pepper. Place into a roasting tin and top the escalopes with tomatoes and Mozzarella. Bake for approximately 10 minutes or until the cheese is slightly golden.
In the meantime cook the pasta in salted water until al dente. Drain the pasta and collect 50 ml of the cooking water. In a warmed bowl, mix together the cooking water and the pesto. Add the pasta and toss. Serve together with the escalopes.
