1 can(s) | peeled tomatoes |

250 g | goat’s cheese |
Instructions
You need a set of round cutters for this recipe.First cut the aubergines into 3-4cm slices. Cut out the inner pulp of each slice with an appropriate sized cutter, leaving an approximately 1cm frame. Cut from the inner pulp 1cm slices and place a slice as bottom into each aubergine frame. Use the remaining inner pulp for another purpose.
Dice the onion and sauté in oil until lucent. Add the minced meat and cook stirring until crumbly. Add the garlic and pour in the wine. Add the tomatoes and herbs de Provence and cook for at least 30 minutes over low heat, stirring occasionally until thickened. Season to taste with salt, pepper and cayenne pepper.
Pour oil into a casserole dish, add rosemary and heat slightly until the rosemary is fragrant. Carefully transfer the aubergines into the casserole dish and fill with the minced meat sauce. Cut the goat’s cheese into slices and top each aubergine with a slice of the cheese. Bake in the preheated oven at 160°C for about 25 minutes.
