Au gratin salami omelette recipe details
Ingredients
1 small | red bell pepper, diced |
1 | tomatoes, diced |
50 g | salami, diced |
8 | green olives, pitted and sliced |
2 | spring onions, sliced |
40 g | freshly grated Cheddar cheese |
1 tbsp | marjoram, chopped |
4 | eggs |
salt and freshly ground black pepper | |
2 tbsp | oil |
Instructions
Beat the eggs into a bowl and whisk with a fork. Season with salt and pepper.In a ovenproof pan, heat the oil. Add the salami and bell peppers and cook stirring for a minute. Pour over the eggs and divide the tomatoes, olives and onions on top. Sprinkle with marjoram and cook over medium heat until nearly set.
Preheat the grill in the oven to medium. Sprinkle the omelette with the cheese and transfer into the oven. Grill until the cheese is melted and golden brown. Cut the omelette into pie pieces and serve.
