Ingredients
300 g | small pasta |
salt and pepper | |
8 stalk(s) | asparagus, woody ends removed, in 3cm pieces |
150 g | smoked salmon, diced |
1 | onion, chopped |
2 | red bell peppers, cleaned and diced |
1 | courgette, trimmed and diced |
2 tbsp | butter |
3 tbsp | flour |
200 g | single cream |
375 ml | vegetable stock |
3 tsp | lemon juice |
½ bunch(es) | dill, chopped |
30 g | freshly grated Parmesan cheese |

Instructions
Cook the pasta in salted water until al dente. Cook the asparagus in salted water with a pinch of sugar for 6-8 minutes. Drain pasta and asparagus and transfer both into a buttered casserole dish.Sauté onion, bell pepper and courgette in butter for 2 minutes. Sprinkle with the flour and cook stirring for a minute. Deglaze with the stock and the cream. Bring to a boil, stirring constantly, and cook over low heat for 5 minutes. Season to taste with salt, pepper and lemon juice. Stir in the dill and the salmon.
Evenly pour the sauce over the pasta and asparagus. Sprinkle with the cheese and bake in the preheated oven at 200°C until golden and bubbling.
