Au gratin farfalle with tomato and pesto recipe details
Ingredients
300 g | pasta (farfalle) |
300 g | chicken breast fillet |
salt and pepper | |
½ bunch(es) | spring onions |
6 small | beef tomatoes |
1 medium | aubergine |
2 tbsp | olive oil |
1 pinch(es) | sugar |
3 tbsp | basil pesto |
125 g | mozzarella cheese |
5 tbsp | freshly grated Parmesan cheese |
Instructions
Cook the Farfalle in salted water until al dente.Rinse, pat dry and cut in slices the chicken breast. Slice the spring onions and dice the tomatoes and aubergine.
Preheat the oven to 180°C.
In a skillet heat one tablespoon of oil and sauté the chicken breast and the spring onions. Season with salt and pepper. Remove from the pan, add the remaining oil and sauté the diced aubergine. Add the tomatoes and cook over medium heat for 4 minutes. Stir in the pesto and season to taste with salt, pepper and sugar.
In a large shallow casserole dish divide the Farfalle. Cover with the chicken and onion mixture and coat with the vegetable sauce. Drain the Mozzarella cheese, cut in pieces and divide on top. Sprinkle with Parmesan. Scallop in the preheated oven for 15-20 minutes.
