Ingredients
500 g | asparagus, washed, trimmed |
For the tart dressing: | |
60 ml | olive oil |
180 ml | mayonnaise |
60 ml | red wine vinegar |
½ tsp | salt |
1 tbsp | paprika |
1 tbsp | dry mustard |
1 clove(s) | garlic, crushed |
For the topping: | |
1 medium | egg, hard-boiled, grated |
Instructions
Steam asparagus spears until tender, 8-10 minutes. Drain.
Blend all dressing ingredients until smooth. Pour over asparagus and grate egg over dressing.
Refrigerate 4 hours before serving.
