|500 g||asparagus, washed, trimmed|
|For the tart dressing:|
|60 ml||olive oil|
|60 ml||red wine vinegar|
|1 tbsp||dry mustard|
|1 clove(s)||garlic, crushed|
|For the topping:|
|1 medium||egg, hard-boiled, grated|
Steam asparagus spears until tender, 8-10 minutes. Drain.
Blend all dressing ingredients until smooth. Pour over asparagus and grate egg over dressing.
Refrigerate 4 hours before serving.
