Ingredients

500 g asparagus, washed, trimmed
For the tart dressing:
60 ml olive oil
180 ml mayonnaise
60 ml red wine vinegar
½ tsp salt
1 tbsp paprika
1 tbsp dry mustard
1 clove(s) garlic, crushed
For the topping:
1 medium egg, hard-boiled, grated

Instructions

Steam asparagus spears until tender, 8-10 minutes. Drain.

Blend all dressing ingredients until smooth. Pour over asparagus and grate egg over dressing.

Refrigerate 4 hours before serving.
