Asparagus with peach and ham recipe details
Ingredients
1 kg | asparagus, woody ends removed |
1 tbsp | butter |
2 tsp | sugar |
1 tsp | salt |
4 tbsp | balsamic vinegar |
4 | peaches, peeled and sliced |
200 g | air-dried ham, thinly sliced |
Instructions
Cook the asparagus in salted water with a knob of butter and a pinch of sugar until done, but still a bit firm to the bite. Strain and collect 400 ml of the asparagus broth.Mix together the asparagus broth and the vinegar. Pour over the asparagus and marinate overnight.
Arrange the asparagus, peaches and ham on plates and serve with fresh bread.
