Asparagus omelette with tomato sauce recipe details
Ingredients
500 g | asparagus, woody ends removed, sliced |
100 ml | whipped cream |
2 tbsp | butter |
6 | eggs |
1 tbsp | flour |
salt and freshly ground black pepper | |
150 g | grated cheese (Cheddar or Gouda) |
3 | tomatoes, peeled and diced |
1 | shallot, chopped |
1 clove(s) | garlic, minced |
4 slice(s) | sundried tomatoes, diced |
1 tbsp | red wine vinegar |
3 tbsp | extra virgin olive oil |
Instructions
Preheat the oven to 180°C.In a skillet, heat the butter and sauté the asparagus until just soft. Mix the eggs with flour and cheese and fold in the whipped cream. Season with salt and pepper. Pour the egg mixture over the asparagus and bake until set and golden, turning once.
Mix the tomatoes with vinegar and oil. Season to taste with salt and pepper.
Serve the asparagus omelette with the raw tomato sauce.
