Ingredients
Serves: 4- 24 thin stalks asparagus
- 4 slices bread
- 4 teaspoons Dijon mustard
- 8 slices ham
- 2 hard-boiled eggs, peeled and sliced
- 8 thin slices tomato
- 4 slices Provolone cheese
Preparation method
Prep: 15 mins | Cook: 10 mins1. Preheat broiler to High and bring a large skillet of water to boil over medium heat.
2. Boil asparagus in water for about 4 minutes until cooked through and bright green, then drain. Meanwhile, place bread on a baking sheet and broil for 1 minute per side to toast.
3. Build sandwiches: spread mustard on all slices of toast, then place 2 slices of ham, 6 asparagus stalks, half of a hard-boiled egg, 2 tomato slices, and a slice of cheese on four of the pieces of toast. Top with remaining bread.
4. Place sandwiches under broiler for another 2 minutes to melt the cheese.
