Ingredients
Serves: 2- 1/2 cup chopped cooked corned beef
- 2 tablespoons plus 1 teaspoon mayonnaise
- 2 tablespoons finely chopped celery
- 1 green onion, finely chopped
- 1/2 teaspoon prepared mustard
- 4 slices pumpernickel bread
- 2 slices Swiss cheese
- 1 tablespoon butter, softened
Preparation method
Prep: 5 mins | Cook: 5 mins1. Stir corned beef together with mayonnaise, celery, green onion, and mustard in a bowl. Coat two slices of bread with the mixture, then build sandwiches with cheese and remaining bread.
2. Coat the sandwich with butter.
3. Place a skillet over medium heat. Add sandwiches and cook for about 5 minutes, flipping midway through cooking time, until cheese melts and bread browns. Serve.
