Asparagus Casserole recipe

|700 g||asparagus, rough ends removed, cut into small pieces (2 cm long)|
|1 tbsp||vegetable oil|
|1 medium||onion, finely diced|
|1 clove(s)||garlic, crushed|
|240 ml||double cream|
|100 g||Gruyere cheese, grated|
|60 g||Parmesan cheese, grated|
|4 tbsp||butter, melted|
|salt and pepper, to taste|
|bread crumbs, if desired|
Preheat the oven to 180°C.
Heat the oil in a pan over medium heat. Stir in the onions and garlic and sauté until soft. Season with salt and pepper. Add the asparagus and sauté until just tender. Remove from heat and leave to cool.
In a bowl, whisk together the eggs, butter, heavy cream and cheeses.
Place asparagus in casserole dish. Pour the egg and butter mixture over the asparagus and top with bread crumbs if desired.
Bake until casserole is set, about 20 minutes.
