Asparagus cheese quiche casserole recipe details
- Ingredients:
- 1 pound fresh asparagus, cut into 2-inch pieces
- 4 Tablespoons butter, melted
- 1 loaf sliced bread, crust removed
- 1 cup shredded cheddar cheese (divided use)
- 2 cups cubed ham, churico, or linguica
- 6 eggs
- 3 cups milk
- 2 teaspoons minced onion or 1 teaspoon chopped chives
- 1/2 teaspoon salt
- 1/2 teaspoon dry mustard
- nutmeg to taste
In a saucepan, cover asparagus with water and cook until tender but crisp. Drain and set aside. Lightly brush butter on 1 side of bread slices. Place half of the bread, butter side up, in a greased 9 x 13-inch pan. Sprinkle 1/2 cup of the cheese on top; layer with asparagus and meat. Cover with remaining bread, butter side up.
In a bowl, beat eggs; add milk, onion, salt, and mustard and pour over the bread. Cover and refrigerate overnight. Sprinkle nutmeg on top to taste. Bake, uncovered, at 325 degrees for 50 minutes. Sprinkle with remaining cheese. Return to oven for 10 minutes or until cheese is melted and a knife inserted in center comes out clean.
