Asparagus and salmon lasagna recipe details
Ingredients
800 g | asparagus, woody ends removed |
salt and pepper | |
1 pinch(es) | sugar |
3 tbsp | butter |
2 tbsp | flour |
500 g | salmon, cut in 3cm cubes |
300 ml | milk |
50 ml | white wine |
1 dash(es) | nutmeg |
1 tbsp | tarragon |
10 sheet(s) | of lasagna, you may need a bit more or less |
200 g | grated cheese (Cheddar or Gouda) |
Instructions
Cook the asparagus in salted water with a pinch of sugar and 1 knob of butter for 5 minutes. Drain, but reserve 400 ml of the cooking water. Sprinkle the salmon with salt and pepper.Heat the remaining butter and stir in the flour. Cook stirring for 2-3 minutes. Add in the milk and the wine, stirring constantly with a wire whisk. Pour in the cooking water and bring to a boil, stirring constantly. Season to taste with salt, pepper, nutmeg and tarragon.
Preheat the oven to 180°C. In a buttered casserole, layer in turn sauce, asparagus, salmon and lasagna sheets. Finish with sauce. Sprinkle with the cheese and bake for 40-50 minutes.
