Ingredients

600 g turkey breast fillet, diced
1 small piece of ginger, grated
1 bunch(es) spring onions, sliced
400 g mixed vegetables, frozen, ready to cook
2 tsp curry paste
100 ml single cream
2 sprig(s) cilantro, chopped
3 clove(s) garlic, minced
3 tbsp oil
100 ml vegetable stock
salt and pepper
sugar

Instructions

In a saucepan, bring 200ml water to a boil. Add the frozen vegetables and bring to the boil again. Cover and cook, stirring occasionally, over medium heat until the vegetables are done, but still a bit firm to the bite.

In a large pan or wok heat the oil. Stir-fry the meat until golden all around. Add the garlic, curry paste, ginger and spring onions and stir-fry for a few minutes. Deglaze with the cream and the stock. Add the vegetables with their cooking water. Cook over low heat for a minute. Season to taste with salt, pepper and sugar.

Sprinkle with cilantro and serve with rice.
