Ingredients
6 | artichoke hearts |
3 clove(s) | garlic, minced |
3 tbsp | butter |
1 | potato, peeled, diced |
800 ml | vegetable broth |
salt and pepper, to taste |
Instructions
Heat butter over medium heat, and sauté the artichoke hearts and garlic, stirring frequently.Add potato and stock and bring to a boil. Then reduce the heat and bring to a simmer. Cook until the vegetables are tender.
Combine potato and artichokes in a blender, add a bit of cooking liquid and process until smooth.
Transfer back to the pan, season with salt and pepper, and reheat. Serve immediately.
