Ingredients
300 g | plain flour |
2 tsp | baking powder |
½ tsp | bicarbonate of soda |
1 tsp | mixed spice |
½ tsp | ground ginger |
120 g | light brown sugar |
60 g | chopped mixed peel |
175 g | raisins |
120 g | unsalted butter, softened |
175 g | golden syrup |
1 large | egg, beaten |
4 tbsp | milk |
Instructions
Preheat oven to Gas Mark 3, 170C, 325F. Grease a 2lb, 900-1kg loaf tin.Sift flour, baking powder, bicarb and spices into a large bowl. Mix in the sugar, peel and raisins.
Melt the butter with the syrup in a small saucepan over a low heat. Make a well in the flour mixture and pour in the syrup mixture and mix together. Add the beaten egg and the milk and mix thoroughly.
Pour mixture into tin and bake for 40-50 minutes or until a skewer inserted into centre of loaf comes out clean.
Allow to cool for several minutes in tin and then turn out onto a wire rack to cool fully.
Slice to serve.
