Apricot stuffed french toast recipe details
- Ingredients:
- One 1-pound loaf French bread, unsliced
- 2/3 of one 8-ounce package of cream cheese
- 1/3 cup part-skim ricotta cheese
- 1/3 cup apricot preserves
- 5 eggs
- 1-1/4 cups milk
- 1/2 teaspoon vanilla
- 1/4 teaspoon ground cinnamon
- dash ground nutmeg
- 2 Tablespoons butter or margarine
Cut the French bread into diagonal slices about 1 inch thick. Then cut pocket in each slice, cutting from the top-crust side almost to the bottom-crust side. In a small mixing bowl, stir together softened cream cheese, ricotta cheese, and apricot preserves. Spoon about 1 Tablespoon of the cheese mixture into each pocket. In a mixing bowl beat eggs, milk, vanilla, cinnamon, and nutmeg until combined. Dip stuffed bread slices into egg mixture. On a griddle or skillet, heat butter. Add stuffed bread slices. Fry over medium heat until golden brown, turning once (allow about 1-1/2 minutes for each side).
Serve with Orange Syrup.
