Apricot pork roast recipe details
Toss just three ingredients in your slow cooker and you’ll have sweet, delicious meat for sandwiches or anything else. Also includes tips to make gravy once the “cooking” is done.

Ingredients
Serves: 6- 1 (2 to 3 pound) boneless pork loin roast
- 1 (12 ounce) jar apricot preserves
- 1 cup vegetable broth
- 2 tablespoons cornstarch
- 1/4 cup water
Preparation method
Prep: 15 mins | Cook: 7 hours1. In a slow cooker, pour the preserves and broth over the pork loin roast. Cover. Cook on LOW for 7 hours, then remove meat from the slow cooker and keep warm.
2. Pour pan juices into a saucepan and bring to a boil over medium-high heat. In a separate small bowl, whisk the cornstarch with water, then slowly pour into the boiling pan juices. Whisk and cook for 2 more minutes to thicken. Serve over the pork loin as gravy.
