Apricot honey cake recipe details
Ingredients
80 g | dried apricots |
60 ml | dark rum |
2 large | eggs |
240 ml | honey |
80 ml | vegetable oil |
juice of 1 lemon | |
juice of 1 orange | |
60 g | granulated sugar |
80 g | apricot jam |
200 g | flour |
tsp | baking soda |
Instructions
Soak apricots in rum for at least 30 minutes.Preheat oven to 180°C and grease a loaf pan.
In mixing bowl beat eggs with a whisk. Stir in honey, vegetable oil, lemon and orange juice, sugar and apricot jam.
Sift flour and baking soda into another bowl.
Strain apricots reserving the excess rum.
Add flour alternately with rum to the honey cake mixture and then add the apricots.
Spoon batter into prepared pan and bake for 55 minutes. Remove from oven and cool on a rack.
