Apricot crumble cake recipe details
Ingredients
For the yeast dough: | |
375 g | flour |
1 sachet | active dry yeast |
50 g | sugar |
1 tsp | vanilla extract |
1 pinch(es) | salt |
1 | lemon, grated rind |
1 | egg |
25 g | butter, soft |
150 ml | milk, lukewarm |
For the topping: | |
2 large can(s) | apricot halves, approx. 480g each |
500 g | yoghurt |
75 g | sugar |
2 | eggs |
1 packet(s) | custard powder |
For the crumble topping: | |
150 g | flour |
50 g | rolled oats |
80 g | sugar |
1 tsp | vanilla extract |
80 g | butter |
Instructions
Sieve the flour in a bowl and combine with the yeast. Add in the sugar, vanilla extract, salt, lemon rind, egg, butter and milk. Knead until the dough is pliable and smooth, cover and set aside in a warm place until the dough has risen considerably.Drain the apricots.
Dust the dough slightly with flour, knead again on a floured surface and roll out on a greased baking tray, 30*40cm. Pierce the dough repeatedly with a fork.
Mix the yoghurt with sugar, eggs and custard powder. Spoon the mixture on the dough and divide evenly. Leave free 1 cm at the edges. Divide the apricots on top.
For the crumbles sieve the flour into a bowl and add the rolled oats, sugar, vanilla extract and butter. Knead with your fingertips to crumbles and divide the crumbles on top of the cake.
Leave in a warm place until the dough has risen again. Preheat the oven to 180°C and bake for 30 minutes.
