Ingredients
1 | onion, diced |
1 tbsp | oil |
1 kg | minced beef or venison |
1 tbsp | paprika powder |
1 tbsp | turmeric |
1 tsp | hot curry powder |
1 tsp | ground ginger |
½ tsp | cayenne pepper |
1 tsp | sugar |
1 tsp | salt |
400 g | tomato passata |
65 g | raisins |
55 g | tomato puree |
1 tbsp | red wine vinegar |
1 tbsp | Worcestershire sauce |
2 tbsp | mango chutney |
1 tbsp | apricot jam |
1 ½ slice(s) | white bread |
125 ml | milk |
some | instant stock |
1 | egg |
750 g | rice |
2 stick(s) | cinnamon |
50 g | brown sugar |
1 tsp | turmeric |
20 g | butter |
100 g | raisins |
1 | onions, chopped |
200 g | carrots, sliced |

some | vegetable stock |
Instructions
Fry the diced onions in a large roasting tin until translucent, then add the minced meat. Mix pepper, turmeric, curry, ginger, cayenne pepper, sugar and salt. Add to the pan and cook stirring until the meat is crumbly. Add the tomato purée and cook stirring for 1 more minute. Add the tomatoes, raisins, mango chutney, red wine vinegar, Worcestershire sauce and apricot jam. Bring to a boil and simmer for some minutes.In the meantime, dice the bread and soak in milk. Squeeze out the milk (but keep the milk) and stir the bread into the mixture in the roasting tin.. Season to taste with salt and instant stock.
Whisk the eggs with a little of the collected milk and pour the egg sauce over the meat. Garnish with lemon leaves or bay leaves. Bake in the preheated oven at 180 degrees for approximately 30 minutes.
For the rice, bring 1 litre of water with some instant stock, cinnamon, sugar, turmeric and butter to a boil and cook the rice according to package instructions. After 5 minutes, add the raisins. When the rice is cooked, remove the cinnamon sticks and strain the rice. Fry the other onion until translucent. Add to the rice and season with a little turmeric and cinnamon powder. Place the rice into a warmed bowl and keep warm.
Sauté the carrots over low heat in a knob of butter. Add a little stock and cook until the stock has evaporated. Season to taste with salt and cinnamon powder.
Serve the Bobotie with the rice and the carrots.
