Apricot and lemon muffins recipe details
Ingredients
1 can(s) | apricots |
1 | lemon, grated peel |
1 tsp | vanilla extract |
230 ml | milk |
300 g | flour |
1 tbsp | baking powder |
½ tsp | salt |
115 g | soft butter |
1 | egg |
Instructions
Preheat the oven to 200°C.In a bowl, mix together the flour, baking powder and the salt. In another bowl, cream together the butter and the sugar and whisk in the egg. Stir in the milk, lemon zest and the vanilla extract. Add to the dry ingredients and stir until well combined.
Fill the mixture into buttered muffin cups up to ¾ . Top each muffin with half an apricot. Slightly press the apricots into the batter. Bake for 20-25 minutes.
