Apple Pancakes recipe

Whisk the egg whites with a tablespoon of sugar until stiff. Cream together the egg yolks and another tablespoon of sugar. Whisk in the milk. Sift in the flour, salt and baking powder and stir until well combined. Fold in the beaten egg white.
Preheat the oven to 160°C.
In a pan, melt the butter. Add a tablespoon of sugar and the apples and cook until caramelized. Deglaze with the Calvados. Pour over the batter and cook until slightly set. Transfer the pancake into the oven and bake for approximately 10 minutes or until golden.
