Ingredients

4  apples, peeled, cored and sliced
2 tbsp lemon jucie
2 tbsp water
1  egg white
1 pack(s) vanilla sugar
4 tbsp porridge oats
2 tsp honey
2 tbsp apple juice

Instructions

In a saucepan, combine the apples with lemon juice and water. Cook over low heat until soft. Purée and allow to cool.

Whisk the egg white and the vanilla sugar until stiff. Fold in 2 tbsp of the apple sauce.

In a small pan, roast the porridge oats. Stir in the honey and the apple juice. Allow to cool.

Pour the apple sauce into 4 cocktail glasses. Top up with the foamy egg white mixture and the roasted oats. Serve immediately.
